    Acclaimed chef and restaurateur Tom Colicchio reflects on the cultural and culinary history of Lower Manhattan to create a menu of new New York classics at his signature restaurant Fowler & Wells. His decidedly American culinary sensibility – a combination of Italian devotion to ingredients, precise French technique and reverence for a world of flavors, set within the dining room’s rich, jewel-toned furnishings and landmark details establishes a new dining standard in downtown Manhattan. Fowler & Wells features modern American dishes with bold flavors, unexpected harmonies and nods to the classic technique and cuisine of turn-of-the-century New York City.

    In addition to a having a signature restaurant, Tom Colicchio’s Crafted Hospitality is the hotel’s exclusive food and beverage partner, providing in-room dining and catering.

    Keith McNally’s Augustine will be a Brasserie-style restaurant: open from breakfast through supper, catering equally to a mid-morning coffee as well as a celebratory dinner. The menu will include a combination of lighter dishes as well as French classics, with a special Rotisserie and Grillades section of meats, fish and poultry. Keith McNally’s first restaurant was The Odeon in 1980. Since then he’s opened Café Luxembourg, Nell’s, Lucky Strike, Pravda, Balthazar, Balthazar Bakery, Pastis, Schiller’s, Morandi, Minetta Tavern, and Cherche Midi, as well as Balthazar in London.
